Preheat the oven to 180 °C.
Season the salmon fillets with salt, pepper and lemon zest.
Wash the zucchini and slice thinly.
Layer the zucchini slices on the salmon fillets, season with a little salt and olive oil and bake in the oven for 12 minutes.
Serve with chopped tomatoes.
