Grilled Norwegian salmon don't need complicated side dishes to taste good. This is a simple recipe where the salmon is being served in a sandwich with fresh vegetables.
Cut salmon in portions and season with salt and pepper.
Fold a sheet grill foil double, brush with oil and place the salmon.
Fry the salmon on a warm grill for about 3 minutes, turn it and fry it 2 minutes on the other side.
Grill the slices of bread on the grill for a couple of minutes on each side.
Slice tomato and finely chop shallot.
Place salad leaves. tomato slices and shallot on half of the slices of bread.
Place salmon on each slice of bread with salad, and place a slice of bread on top.
Cut each sandwich in half and serve.
