  • Set the oven to 185°C/365°F/gas mark 5.
  • Arrange the pie crust in an ovenproof dish/pie tin.
  • Cut the smoked salmon into suitable pieces.
  • Cut the red onion into thin rings.
  • Stir together eggs, sour cream, parmesan and salt and pepper.
  • Spread spinach, salmon and red onion on the pie crust in the tray. Pour the egg mixture over it.
  • Put the tray in the middle of the oven and bake for about 30 minutes.
  • Serve with a mixed salad.
