Deliciously creamy Norwegian smoked salmon mousse and cucumber served in small glasses is an appetizer that will easily impress your guests. - Add Norwegian smoked salmon, cream, lemon juice, white wine vinegar and parsley to a food processor. Run until you get a smooth cream.
- Pour the smooth smoked salmon cream into a bowl and add pepper. Mix well.
- Beat the egg whites stiff with an electric mixer and gently turn into the salmon cream to get a fluffy and light mousse.
- Rinse the cucumber with water, cut it in half and remove the seeds with a spoon before cutting the cucumber it into small cubes.
- Layer the cucumber cube and salmon mousse in small serving glasses.
- Leave the glasses in the fridge until serving.
- Garnish with a teaspoon of sour cream and finely chopped parsley. Serve cool.
Serving tip: Serve the Norwegian smoked salmon mousse with a small cracker to add some crunch or on top of a cracker as a snack. If you prefer a milder salmon mousse, you can substitute some of the smoked salmon with fresh raw Norwegian salmon.
