Fennel
- Rinse fennel and cut into wedges.
- Fry in butter until they are barely tender, 3-4 minutes.
Sour cream sauce
- Melt butter and cool to finger temperature.
- Whisk butter with sour cream to a creamy consistency.
- Taste with lemon juice.
Pan-fried skrei
- Scrape the fish well and cut into servings.
- Sprinkle with salt on the meat side and leave for about 10 minutes.
- Melt butter in a frying pan and add the Skrei skin side down.
- Fry until the skin is dark brown, 4-5 minutes, turn the fish and fry for 1 minute on the meat side.
- Serve the Skrei with fennel, sour cream sauce and boiled carrots and potatoes.
