Oven-baked skrei with butter sauce and oxheart cabbage

Baking cod in the oven is easier than you think! Baked with butter and garlic and served with oxheart cabbage and delicious root vegetables, this is a cod dish that will impress no matter the occasion.

Preparation

  • Preheat the oven to 180 degrees.
  • Cut the skrei into portions, sprinkle salt over them and let them sit for 7 minutes.
  • Rinse off the salt and pat the cod dry with kitchen roll.
  • Put the skrei in a greased ovenproof dish, sprinkle pepper over it and add slices of garlic and butter.
  • Bake in the oven for approx. 10 minutes.
  • Cut the cabbage into wedges, and sauté in butter.
  • Julienne the carrots and root vegetables and put them in an ovenproof dish with the thyme. Here you can use whichever root vegetables you like, e.g. beets or potatoes. Drizzle over the honey and olive oil. Put in the oven for approx. 10 minutes before the fish and bake together with the fish for approx. 20 minutes in total.

Sauce

  • Melt the butter until it is golden brown but not burnt. Add soy sauce and pepper to taste.
  • Serve the oven-baked skrei with the oxheart cabbage, root vegetables and browned butter. Garnish with thyme. If you like, serve with boiled potatoes.
