Norwegian skrei with bacon and peas a la Unstad

Ingredients

Preparation

Mashed potatoes

  • Boil the potatoes until tender
  • Peel them and mix them with butter, cream, salt and lemon. 
  • Mash the mixture lightly and leave on low heat while you prepare the fish

Mashed peas

  • Melt butter in a saucepan and add the peas
  • Blend the mixture with a hand blender to a coarse puree. 
  • Season to taste with sugar, salt and pepper

Skrei

  • Pat the fish dry with kitchen paper and sprinkle over a pinch of salt 
  • Place the skrei skin side down in a flat pan on medium high heat 
  • The skrei is ready with it starts flaking and has acquired a slightly bouncy consistency
  • Alternatively you can bake the skrei in the oven: Pre heat the oven to 100-120°C. Place the skrei in a oven-proof dish and pour over some good olive oil. Bake for about 10 minutes. 

Bacon

  • Cut into cubes and fry in butter 

Presentation

  • At Unstad, the skrei is served on a warm plate over the mashed potatoes and peas, skin side down in company of crispy bacon cubes.
