Preparation
- Finely chop the onion and sauté in a saucepan with a tablespoon of olive oil for about 5-8 minutes.
- Add the thyme and garlic, stir and cook for 1 minute before adding the tomato along with the salt and pepper. Cook for 2 minutes.
- Add the hot broth and the sweet potato. Cook over low medium heat for 15-20 minutes until the potatoes are almost done.
- Then add the beans and cook for another 5 minutes, being careful not to break them when stirring.
- Season to taste and keep warm while we prepare the Skrei.
- Heat a frying pan with a tablespoon of olive oil.
- Season the Skrei loins and place them in the pan skin side down once the oil is hot, for 5-8 minutes.
- Turn the Skrei loins and leave for 1 minute.
- Serve the Skrei on a bed of beans, sweet potatoes and onion.
- Garnish with a sprig of fresh thyme and lemon zest.
