Skrei with Red Wine Sauce

Skrei can be cooked in various ways. In this recipe the Skrei is served with red wine sauce, toasted mushrooms and potato wedges.

Ingredients

Preparation

  • Preheat the oven to 180 °C.

  • Scrape the skin of the Skrei and cut into portions.

  • Sprinkle salt and pepper over the fish and leave for approx. 10 minutes.

  • Gently pan-fry the Skrei in a frying pan with skin side down in a mix of oil and butter.

  • Place the fish with skin side up on a oven tray with baking paper.

  • Bake in the oven until it is barely cooked through, approx. 6 minutes.

Potato wedges

  • Turn the oven up to 225 °C.

  • Scrub the potatoes, dry and cut into wedges.

  • Place the potatoes in an oven dish, drizzle with olive oil and sprinkle with salt and pepper.

  • Bake in the oven until tender and golden, approx. 20 minutes.

Red wine sauce

  • Finely chop shallot and cook with red wine without a lid until the wine is almost reduced all down.

  • Dice butter and add a dice the a time to the sauce. The sauce must not boil while doing this, then it will separate.

  • Taste with salt and pepper.

Serve with

  • Slice mushrooms and pan-fry golden in butter.

  • Sprinkle with salt and pepper.

Serve the Skrei with potato wedges, red wine sauce and mushrooms.
