Pan-Fried Skrei with Fennel and Sour Cream Sauce

Pan-fried Skrei with sour cream sauce that melts on the fish, potatoes and carrot is a traditional dish. Here it's served with fennel that gives it a little extra.

Preparation

Fennel

  • Rinse fennel and cut into wedges.
  • Fry in butter until they are barely tender, 3-4 minutes.

Sour cream sauce

  • Melt butter and cool to finger temperature.
  • Whisk butter with sour cream to a creamy consistency. 
  • Taste with lemon juice.

Pan-fried skrei

  • Scrape the fish well and cut into servings.
  • Sprinkle with salt on the meat side and leave for about 10 minutes.
  • Melt butter in a frying pan and add the Skrei skin side down.
  • Fry until the skin is dark brown, 4-5 minutes, turn the fish and fry for 1 minute on the meat side.
  • Serve the Skrei with fennel, sour cream sauce and boiled carrots and potatoes.
