Baked Skrei with Chorizo

Skrei baked in the oven with chorizo, aromatic mushrooms and homemade mashed potatoes is a lovely dish. This recipe takes time, but it is worth it.

Ingredients

Preparation

  • Preheat the oven to 200 °C.
  • Cut the Skrei in servings, place in a greased ovenproof dish and sprinkle with salt.
  • Drip a little lemon juice over the Skrei and place two slices of chorizo on each piece of fish.
  • Cover the dish with clingfilm and leave for a couple of hours.
  • Bake the Skrei in the oven until it is done, approx. 8 minutes.

Mashed potatoes

  • Peel and cut potatoes into dices.
  • Cook tender in unsalted water, drain and let them steam well.
  • Mash the potatoes with butter, cream and lime juice.
  • Taste with nutmeg, salt and pepper.

Aromatic mushrooms

  • Rinse and cut mushrooms and onion in small dices and sauté in butter.
  • Add red wine, lemon juice, thyme and brown sugar. Reduce until the liquids are gone.
  • Taste with salt and pepper.

Serving

  • Serve the Skrei with mashed potatoes and aromatic mushrooms on the side.
