An original and simple fish appetizer from Chiara Maci that breathes new life into your everyday omelets!
Warm a little extra virgin olive oil in a large non-stick pan.
Beat the eggs in a bowl with a pinch of salt and pepper, and the milk.
Pour the mixture into the pan and make the omelet. Turn it over and leave to cool after cooking.
Mix the goat's cheese with the herbs and spread over the omelet in a layer.
Finally, lay the salmon on top and roll it up tightly. Serve in slices accompanied by a salad dressed with extra virgin olive oil and salt.
The same ingredients can be used to make a layered dish instead of a roll.
