Procedure:
- Preheat the oven to 180 ºC
- Cut the onion and red bell pepper into strips.
- Add the vegetables to a ovensafe dish, salt lightly, add the bayleaf and a generous drizzle of olive oil. Mix well and bake for 10 minutes before mixing it again, bake for a further 10 minutes until the onion is tender.
- Prepare the fish by drying it with kitchen paper. Place on top of the vegetables, adding another drizzle of oil and a splash of white wine. Return to the oven for 15 minutes.
Garlic stir-fry:
- Slice the garlic.
- Heat some oil in a frying pan and cook the sliced cloves with the cayenne pepper at a gentle temperature until golden and crisp.
Serving:
- Pour the garlic stir-fry over the cod and serve immediately.
