Baked Norwegian salted cod

Easy and tasty baked Norwegian salted cod, the perfect dish for a family dinner!

Procedure: 

  • Preheat the oven to 180 ºC
  • Cut the onion and red bell pepper into strips.  
  • Add the vegetables to a ovensafe dish, salt lightly, add the bayleaf and a generous drizzle of olive oil. Mix well and bake for 10 minutes before mixing it again, bake for a further 10 minutes until the onion is tender. 
  • Prepare the fish by drying it with kitchen paper. Place on top of the vegetables, adding another drizzle of oil and a splash of white wine. Return to the oven for 15 minutes. 

Garlic stir-fry: 

  • Slice the garlic. 
  • Heat some oil in a frying pan and cook the sliced cloves with the cayenne pepper at a gentle temperature until golden and crisp. 

Serving:

  • Pour the garlic stir-fry over the cod and serve immediately.
