Seared Norwegian salmon with kale and lentils

Serve pan-fried salmon on a bed of kale, for a light and flavorful dinner. Top with chilli, sesame seeds and fresh coriander.

  • Cut the salmon into four even pieces and season with salt and pepper.
  • Finely chop the garlic and slice the avocados.
  • Heat a large frying pan with oil and quickly fry the salmon on both sides. The salmon shoulds become golden on the outside but sill retain a "pink" core. Transfer the salmon to a plate.
  • Wash the pan and heat it again. Add a little oil to the pan and fry the kale over medium-high heat, stirring continuously for 2-3 minutes. Add the garlic and lentils halfway through frying.
  • Reduce the heat and add the teriyaki sauce, sesame oil (if desired) and lime juice.
  • Arrange the stir sfried kale and avocado on plates and place the salmon fillets on top.
  • Sprinkle with chopped coriander.
