Preparation
- Preheat the oven to 180°C. 
- Cut the salmon into suitable portions, sprinkle with salt and put in an oiled oven dish. Drizzle with olive oil. 
- Grate parmesan and sprinkle over the salmon. 
- Bake in the oven for about 15 minutes. 
Tomato salad
- Cut tomato in wedges, onion in thin slices and cucumber in cubes. 
- Mix together olive oil and balsamic vinegar. Season with a little salt and pepper. 
- Pour the dressing over the salad and stir gently. 
Serve the salmon with the tomato salad and pasta of your choice.
