Preparation
- Preheat the oven to 200°C.
- Cut the salmon into serving pieces.
- Cut of the bottom ends of the asparagus, and cut the broccolini and asparagus into even pieces. Slice the lemon.
- Mix the olive oil, thyme, oregano and vegetables in a bowl, and transfer the mixture to an ovenproof dish.
- Drizzle a couple of tablespoons of water over the vegetables and place the salmon pieces on top.
- Sprinkle flaked almonds, salt and pepper over the fish, and cover the dish with aluminium foil.
- Bake in the oven for about 20-25 minutes. Check if the fish is done by gently pressing on it. If it flakes, it is ready to serve.
Tips: You an easily adapt this recipe with vegetables and herbs as you like. This is a great dish to make if you have vegetables in the fridge that needs to be used! Feel free to try sweet chili sauce, soy sauce, or lemon juice on the fish to give it a new flavour.
