Preparation
Cut the saithe in pieces of five centimetres and season with salt, pepper and taco seasoning.
Fry the fish in oil until golden.
Heat the tortilla according to instructions on the package. Wrap them in foil after heating to keep them moist until serving.
Salsa
Blanch the tomato by cutting a cross on top, immerse in boiling water for a couple of minutes and then immediately place in cold water. Remove the skin and seeds and finely chop the tomato.
Finely chop the chili.
Finely chop the onion and garlic and fry in olive oil until golden. Add tomatoes and chili and cook for 3-4 minutes.
Season with salt, pepper and sugar and stir in fresh coriander.
Guacamole
Blanch the tomato by cutting a cross on top, immerse in boiling water for a couple of minutes and then immediately place in cold water. Remove the skin and seeds and finely chop the tomato.
Halve the avocado in two, remove the stone and scoop out the avocado flesh.
Finely chop the garlic, spring onion and chili.
Mash the avocado with garlic and lime juice until smooth.
Gently stir in spring onion, chili, tomatoes and coriander. Season to taste with salt and pepper.
Fill the tortillas with saithe and salsa. Serve with guacamole and sour cream.
