Tomato and saithe stew with vegetables

A tomato and saithe casserole with fresh vegetables is hard to resist. Served with pasta, it is a simple and satisfying dish.

Ingredients

Preparation

  • Cut the saithe fillet into portions and drizzle with salt

Vegetables

  • Cut all the vegetables into approx. 2 cm pieces and fry them in a little oil in a saucepan for 2 minutes.
  • Add the tinned tomatoes and cook for approx. 10 minutes until the sauce has thickened.
  • Season with salt and pepper.
  • Place the saithe pieces over the vegetables and cover with a lid.
  • Bring to the boil on low heat for approx. 7 minutes until the saithe is cooked.

Serve the saithe with the vegetables and cooked whole grain pasta, and sprinkle with fresh basil.
