Saithe burgers
- Cut the fish into small pieces and place them in a food processor
- Add salt and run the machine until the dough is smooth – this only takes a few seconds
- Pour in the milk in three rounds, and let the machine run each time so the milk is fairly mixes and the dough mix stays smooth
- Put in potato flour, minced garlic, pepper and chives
- Fry one small fish burger and taste with spices
- Form flat burgers and fry them in butter approx. 3 minutes on each side
Pickled coleslaw salad
- Mix vinegar, sugar, soy sauce and sesame oil
- Cut the vegetables into thin strips and mix with the pickle sauce, let it sit while making the burgers.
