Norwegian saithe with vegetable stew

Preparation

  • Wash all the vegetables. 
  • Cut the onion and the carrots into julienne strips. 
  • Boil the broccoli, green beans, artichokes, green peas, carrot and onion.  
  • Add 2 tbsp of olive oil to a frying pan.
  • Add the peeled and cut garlic. 
  • Sauté the garlic until golden.
  • Add the diced ham, the vegetables and sauté.
  • Season and keep to one side.
  • In the same pan, add the rest of olive oil and cook the saithe first with the skin facing up for 6 minutes.
  • Then turn it over and cook with the skin facing down for another 7 minutes.
  • Add to the stew, placing the saithe on top.
  • Season with salt and pepper and serve.
