- Wash all the vegetables.
- Cut the onion and the carrots into julienne strips.
- Boil the broccoli, green beans, artichokes, green peas, carrot and onion.
- Add 2 tbsp of olive oil to a frying pan.
- Add the peeled and cut garlic.
- Sauté the garlic until golden.
- Add the diced ham, the vegetables and sauté.
- Season and keep to one side.
- In the same pan, add the rest of olive oil and cook the saithe first with the skin facing up for 6 minutes.
- Then turn it over and cook with the skin facing down for another 7 minutes.
- Add to the stew, placing the saithe on top.
- Season with salt and pepper and serve.
