Preparation
- Preheat the oven to 200º/400ºF/gas 6.
- Cut the saithe in loins of 250 g.
- Grease a baking tray with a little olive oil and keep to one side.
- Sauté the fish with the skin facing up in a hot frying pan with a little olive oil.
- Place the fish skin down on the tray.
- Add a pinch of black pepper, and a pinch of salt.
- Repeat the process with the rest of the saithe.
- Bake in the pre-heated oven for 8 to 10 minutes.
- Slice the garlic.
- Remove the seeds from the red chillies, and slice the chillies.
- Sauté the garlic in a frying pan with a little olive oil until brown. Add the chilli.
- When the garlic is golden but not burnt, remove from the heat and add the cider vinegar and the juices of the fish that are in the oven tray.
- Stir well and cover the saithe loins with this sauce.
- Decorate with the chopped parsley and serve.
