- Chop the pumpkin, potatoes and leek into small pieces.
- Add them to a pot with the olive oil and sauté.
- Add the water and leave to cook.
- Mash into a thick cream, and add the cream cheese. Season with salt.
- Cook the Norwegian saithe on a grill or in a frying pan.
- Put a dollop of creamy pumpkin mash on the plate. Place the saithe on top and decorate with chopped chives and a sprinkling of pepper.
