Cut the saithe into portions, and sprinkle with salt and pepper on all sides.
Finely chop dill, and cook the potatoes with a little over half of the dill.
Cut chili in strips, finely chop red onion, basil and parsley and mix with the rest of the dill.
Brush the aluminium foil with oil.
Spread half of the chili, onion and herbs on each foil, place the saithe over and cover with the rest of the chili, onion and herbs.
Drizzle with white wine, close the packets and place on the grill.
Grill until the fish is done, approx. 10 minutes.
Serve with dill potatoes on the side.
