Cut the saithe in servings, drizzle with lemon juice, and sprinkle with salt and pepper.
Whisk egg and cream together in a bowl and add finely chopped parsley.
Mix parmesan and bread crumbs in another bowl.
Dredge the saithe first in flour, then in the egg mix and at last in the parmesan mix.
Pan-fry the saithe in oil on high heat for 2-3 minutes on each side.
Potato salad
Cook potato, peel and cut into slices.
Toast the pine nuts in a dry frying pan and tear the rocket.
Add pine nuts, rocket, garlic, white wine vinegar and olive oil to a food processor and mix until a coarse sauce.
Taste with salt and pepper, and add potato slices and capers.
Leave the potato salad to stand for 30 minutes before serving.
Serve pan-fried saithe with potato salad.
