Baked Norwegian saithe with warm salad

Norwegian saithe is known to work with many flavours; here it's combined with orange and pomegranate.

Preparation

  • Fry individual servings of the saithe in a hot frying pan with a little liquid margarine.
  • Cook the bulgur wheat according to the instructions on the packet.
  • Peel the carrots and cut into cubes, then peel the oranges and cut into thin slices.
  • Chop the almonds, red onion and herbs. Mix everything into the bulgur wheat and transfer into a serving bowl.
  • Season with lemon and mix in the pomegranate. Season with salt and pepper. 

Tip: Mix in a handful of finely chopped fresh mint.
