Preparation
- Preheat the oven to 180°C.
- Cut the saithe into portions.
- Peel and cut the potatoes into thin slices.
- Place the potato slices in an oven-proof dish, sprinkle with salt and drizzle with olive oil.
- Bake in the top of the oven for approx. 15 minutes.
- Cut the champignon mushrooms, and finely chop the garlic, parsley and basil.
- Sauté the champignon mushrooms and garlic in a little olive oil for 1-2 minutes.
- Add parsley and flavour with salt and pepper.
- Pour the mix over the potatoes in the dish.
- Sprinkle with basil, salt and pepper, and add the saithe.
- Cut the cherry tomatoes in half and spread around the fish.
- Bake in the oven until cooked for approx. 15 minutes.
Sauce
- Finely chop the parsley, mint and garlic.
- Whisk all the ingredients to make a thick creamy sauce.
Serve the dish with the sauce on the side.
