Breaded Norwegian Saithe Fillet with Green Potato Salad

Saithe fillet is a classic on the Norwegian dinner table, and that is no coincident. This is a simple, quick and healthy dinner. Here the saithe gets a taste of parsley.

  • Cut the saithe in servings, drizzle with lemon juice, and sprinkle with salt and pepper.

  • Whisk egg and cream together in a bowl and add finely chopped parsley.

  • Mix parmesan and bread crumbs in another bowl.

  • Dredge the saithe first in flour, then in the egg mix and at last in the parmesan mix.

  • Pan-fry the saithe in oil on high heat for 2-3 minutes on each side.

Potato salad

  • Cook potato, peel and cut into slices.

  • Toast the pine nuts in a dry frying pan and tear the rocket.

  • Add pine nuts, rocket, garlic, white wine vinegar and olive oil to a food processor and mix until a coarse sauce.

  • Taste with salt and pepper, and add potato slices and capers.

  • Leave the potato salad to stand for 30 minutes before serving.

Serve pan-fried saithe with potato salad.
