Baked Norwegian Saithe with Green Sauce

Baked Norwegian saithe fillet is a simple dish which is quick and easy to prepare and includes potatoes and vegetables. We suggest serving the dish with a cold herb sauce.

Ingredients

Preparation

  • Preheat the oven to 180°C.
  • Cut the saithe into portions.
  • Peel and cut the potatoes into thin slices.
  • Place the potato slices in an oven-proof dish, sprinkle with salt and drizzle with olive oil.
  • Bake in the top of the oven for approx. 15 minutes. 
  • Cut the champignon mushrooms, and finely chop the garlic, parsley and basil.
  • Sauté the champignon mushrooms and garlic in a little olive oil for 1-2 minutes.
  • Add parsley and flavour with salt and pepper.
  • Pour the mix over the potatoes in the dish.
  • Sprinkle with basil, salt and pepper, and add the saithe.
  • Cut the cherry tomatoes in half and spread around the fish.
  • Bake in the oven until cooked for approx. 15 minutes. 

Sauce

  • Finely chop the parsley, mint and garlic.
  • Whisk all the ingredients to make a thick creamy sauce.

Serve the dish with the sauce on the side.
