Baked Norwegian Saithe with Green Sauce

Baked Norwegian saithe fillet is a simple dish. With potatoes and vegetables in the same dish the whole dinner is quickly done. Here with a cold herb sauce.

  • Preheat the oven to 180 °C.

  • Cut the saithe in servings.

  • Pell and cut potatoes in thin slices.

  • Place the potato slices in an oven-proof dish, sprinkle with salt and drizzle with oil.

  • Bake high in the oven for approx. 15 minutes.

  • Cut the champignons, and finely chop garlic, parsley and basil.

  • Sauté the champignons and garlic in a little oil for 1-2 minutes.

  • Add parsley and taste with salt and pepper.

  • Pour the mix over the potatoes in the dish.

  • Sprinkle basil, salt and pepper over, and add the saithe to the dish.

  • Cut cherry tomatoes in half and spread around the fish.

  • Bake in the oven until cooked, approx. 15 minutes.


  • Finely chop parsley, mint and garlic.

  • Whisk all ingredients for the sauce to a thick sauce.

Serve the dish with the sauce on the side.
