Baked Norwegian saithe fillet is a simple dish. With potatoes and vegetables in the same dish the whole dinner is quickly done. Here with a cold herb sauce.
Preheat the oven to 180 °C.
Cut the saithe in servings.
Pell and cut potatoes in thin slices.
Place the potato slices in an oven-proof dish, sprinkle with salt and drizzle with oil.
Bake high in the oven for approx. 15 minutes.
Cut the champignons, and finely chop garlic, parsley and basil.
Sauté the champignons and garlic in a little oil for 1-2 minutes.
Add parsley and taste with salt and pepper.
Pour the mix over the potatoes in the dish.
Sprinkle basil, salt and pepper over, and add the saithe to the dish.
Cut cherry tomatoes in half and spread around the fish.
Bake in the oven until cooked, approx. 15 minutes.
Finely chop parsley, mint and garlic.
Whisk all ingredients for the sauce to a thick sauce.
Serve the dish with the sauce on the side.
