Preparation
Preheat the oven to 120 °C.
Cut the Fjord Trout fillet into suitable portions and place on a baking tray covered with baking paper.
Brush the fish with sunflower oil, sprinkle with salt and pepper and bake in the oven for 10-15 minutes.
Cook the potatoes with the skin on.
Cut the potatoes in thick slices and finely chop the onion.
Fry the potato slices and onion in olive oil quickly and sprinkle with salt and pepper.
Sauce
Finely chop the shallots. Peel and dice the apple.
Add shallot, cider vinegar and apple juice to a sauce pan and reduce.
Gradually add butter.
Add the apple dices and cook for 5 minutes.
Serve the Fjord Trout with the potatoes and sauce on the side.
