Preparation
Cut the cod into servings and brush it mustard.
Mix flour with salt and pepper.
Flip the cod in the flour mix and pan-fry in butter for approx. 3 minutes on each side.
Sweet and sour sauce
Finely chop onion, cut bell pepper in slices and garrot in strips, and sauté in olive oil for 3 minutes.
Stir in tomato purée and ketchup.
Add pineapple pieces, pineapple juice, vinegar, sugar, soy sauce and vegetables stock, and bring to a boil.
Even the sauce with corn starch.
Gently cook while stirring to a nice sauce.
Add chopped parsley before serving.
Serve the cod with sweet and sour sauce and rice on the side.
