Try pan-frying Norwegian cod marinated in chili and garlic. It's amazing served in wraps with mashed potatoes, salad and quark.
Cut the cod into strips.
Finely chop chili and garlic, and mix with olive oil. Add the cod and let marinate for 10 minutes.
Pan-fry the cod in butter for approx. 3 minutes on each side.
Peel potatoes and cook tender in water.
Thinly slice the leek.
Mash the potatoes well and mix with leek and butter.
Taste with salt og pepper.
Cut the cherry tomatoes in half and chop the lettuce.
Heat the tortilla wraps as instructed on the package.
Fill the wraps with cod, mashed potatoes, cherry tomatoes and lettuce. Add quark and a little dill.
Fold up the botton of the tortilla and fold in the sides to a nice wrap.
Serve the cod wraps freshly made.
