Preparation
Cut the fish into even servings.
Whisk egg together.
Dredge the cod in flour, then in egg and at last in breadcrumbs.
Sprinkle with salt and pepper.
Pan-fry the cod on a warm pan in butter and rapeseed oil, 3-4 minutes on each side.
Mashed potatoes
Peel potato, dice and cook tender in unsalted water.
Mash the potato and mix with butter and milk to a nice consistency.
Taste with salt and pepper.
Serve the cod with mashed potatoes, pickled gherkins, sour cream and crispy fried onion.
