Fjord Trout has a beautiful red color, and in this recipe the color is preserved when lightly baked. A nice dish to serve as an appetizer when having guests.
Preheat the oven to 80 °C.
Put the Fjord Trout on a plate and sprinkle with a mix of sugar and salt. Let rest for 10-15 minutes.
Rinse the Fjord Trout in cold water, dry gently with paper and cut into little mouthfuls.
Place the mouthfuls on a baking tray with baking paper and bake in the oven until the Fjord Trout has a internal temperature of 40-42°C, about 10 minutes.
Roughly chop fennel and cut shallot in little bits.
Mix fennel and shallot, and taste with olive oil, lemon juice and salt. And pepper if you like.
Serve the Fjord Trout with fennel salad and garnish with some fresh herbs if you have.
