This recipe is great to serve as an appetizer or as a tapas dish. The Fjord Trout's deep red color looks so tasty that you just have to try it.
Cut the Fjord Trout in half along and cut each piece in slices of 2 mm. Every slice should be a mouthful.
Zest and juice lime and drizzle lime juice over the Fjord Trout.
Sprinkle with a little salt and pepper.
Cut avocado in half, remove the seed and take out the avocadomeat with a spoon.
Mash the avocado to a even mash with olive oil.
Juice lemon, and taste the mash with lemon juice, salt and pepper.
Put a little avocado cream on each Fjord Trout piece, garnish with lime zest and fresh herbs, and serve.
