Cut the Fjord Trout into slices and orange into wedges.
Heat orange juice and olive oil in a pan, and add chopped parsley and pine nuts.
Place the Fjord Trout and orange on a plate and sprinkle with rocket.
Pour the marinade over, and season with salt and pepper.
