Baked Fjord Trout, tomato compote and crispy vegetables on the side – sometimes the best ideas are the simplest. It doesn’t get much easier than this.
Preheat the oven to 100 °C.
Place the Fjord Trout on a baking tray with baking paper, brush with olive oil and sprinkle with salt and pepper.
Bake the Fjord Trout in the oven for 15 minutes.
Cut the tomato in small cubes and finely chop onion and garlic.
Cook together with olive oil on a medium heat for 5 minutes.
Season with salt and pepper.
Cut the sugar peas and celery into small pieces and cook in salted water for 2 minutes.
Serve the Fjord Trout with the tomato compote and vegetables on the side.
