Fjord Trout with Vegetables and Tomato Compote

Tomato compote



  • Preheat the oven to 100 °C.

  • Place the Fjord Trout on a baking tray with baking paper, brush with olive oil and sprinkle with salt and pepper.

  • Bake the Fjord Trout in the oven for 15 minutes.

Tomato compote

  • Cut the tomato in small cubes and finely chop onion and garlic.

  • Cook together with olive oil on a medium heat for 5 minutes.

  • Season with salt and pepper.


  • Cut the sugar peas and celery into small pieces and cook in salted water for 2 minutes.

Serve the Fjord Trout with the tomato compote and vegetables on the side.
