- Toast the black peppercorns in a pan and crack them. Finely chop the garlic and the soy beans.
- Melt butter and add garlic. Let it simmer for 2-3 minutes. Add black pepper, sugar, sambal oelek, sesame oil, soy beans and white wine, cook for another 4-5 minutes. Remove from the heat and stir inn ketjap manis and lime juice to taste.
- Cut and split the snow crab legs.
- Heat neutral oil in a large frying pan and add the crab legs. Fry for 3-4 minutes turning the legs a few times. Add the pepper crab sauce and toss well before serving.
- Garnish with finely sliced spring onions, chopped coriander and serve with lime wedges.
