- Pick all the meat out of the snow crab clusters, shred it with your hands and set aside.
- Finely chop spring onions and celery, mix with mayonnaise, lemon juice and season to taste with chili sauce, salt and pepper.
- Mix the shredded crab through the mayonnaise.
- Brush the brioche hot dog buns with melted butter and heat them in the oven or on a grill.
- Fill the buns with lettuce, the snow crab mix and garnish with fresh herbs. Serve immediately.
