Preparation
- Cut the snow crab legs into pieces at the joints, then cut the pieces in half lengthwise, exposing the meat. Use either a sharp knife with some weight in it, or sharp scissors.
Glaze
- Finely chop the garlic and chives, and grate the ginger.
- Grate the peel and squeeze the juice from the lime.
- Put garlic, chives, ginger, lime zest and juice in a saucepan.
- Mix in sweet chilli sauce, soy sauce, brown sugar and ketchup.
- Bring to the boil and let the mixture simmer on a low heat, stirring, until the sauce thickens, 20-25 minutes.
- Put rapeseed oil in a frying pan and fry the snow crab legs for 3-4 minutes on high heat.
- Pour over the glaze and sprinkle with coarsely chopped spring onions before serving.
- Serve glazed snow crab legs.
Tip: Use a small knife to scrape the meat from the snow crab legs, or use your fingers.
