Preparation
Preheat the oven to 180 °C.
Cut the Skrei into servings, press lemon juice over and lightly season with salt and pepper.
Have a little oil to an oven-proof dish and add the Skrei with skin side up.
Bake in the oven for approx. 10-15 minutes, depending on the thickness of the fish.
Carrot purée
Cook carrots tender in salted water. Drain, but leave some water in the bottom of the pan.
Mash the carrot with butter and grated ginger.
Heat up the purée and taste with lemon juice, salt and pepper.
Gravy
Melt butter in a pan until almost nutty brown.
Add soy sauce, finely chopped garlic and taste with lemon juice.
Serve with
Cut the zucchini lengthwise and make small heart shaped bites.
Steam in lightly salted water for 2-3 minutes.
Serve the Skrei with carrot purée, gravy and steamed zucchini hearts.
