Ingredients
Preparation
- Cut the Skrei in servings, sprinkle with salt and leace for 7 minutes.
- Rinse in cold water and gently dry with a paper towel.
- Pan-fry the Skrei in margarine until it has a golden crust.
- Add butter, turn the fish, set down the heat and fry for 5 minutes before serving.
Mashed potatoes à la Brandad
- Sprinkle the Skrei wtih salt and leave for 20 minutes.
- Rinse in cold water and cook in unsalted water.
- Peel potatoes and cook tender in unsalted water.
- Drain and let the potatoes steam until dry.
- Mash the potatoes with butter.
- Flake the cooked fish and gently fold into the mashed potatoes.
- Heat up the mash and mix well.
Pickled red onion
- Cut red onion in wedges and sauté tender in butter.
- Add sugar and white wine vinegar, and let simmer for a couple of minutes.
- Taste with cayenne pepper and salt. Add rocket right before serving.
Serving
- Serve the Skrei with mashed potatoes à la Brandad and pickled red onion.
