Ingredients
Preparation
- Preheat the oven to 200 °C.
- Cut the Skrei in servings, place in a greased ovenproof dish and sprinkle with salt.
- Drip a little lemon juice over the Skrei and place two slices of chorizo on each piece of fish.
- Cover the dish with clingfilm and leave for a couple of hours.
- Bake the Skrei in the oven until it is done, approx. 8 minutes.
Mashed potatoes
- Peel and cut potatoes into dices.
- Cook tender in unsalted water, drain and let them steam well.
- Mash the potatoes with butter, cream and lime juice.
- Taste with nutmeg, salt and pepper.
Aromatic mushrooms
- Rinse and cut mushrooms and onion in small dices and sauté in butter.
- Add red wine, lemon juice, thyme and brown sugar. Reduce until the liquids are gone.
- Taste with salt and pepper.
Serving
- Serve the Skrei with mashed potatoes and aromatic mushrooms on the side.
