Skrei is an exclusive fish and served with the right things it can be a tasteful dinner. All you need is asparagus, cured ham and lemon oil to make a good meal.
Cut the Skrei in servings.
Bring water to the boil, add salt and vinegar, and add the Skrei when the water is boiling.
Turn down the heat and leave the fish to simmer in the water until it's cooked throught, 6-8 minutes. Don't let the water bubble-boil that can make the fish dry.
Fry ham on a dry pan until crispy.
Boil asparagus in lightly salted water with butter for 2-3 minutes.
Rinse them in cold water right after they have been taken out of the warm water and have some lemon juice over.
Mix lemon juice and olive oil right before serving.
Serve the Skrei with asparagus, cured ham and boiled potatoes on the side, with lemon oil around.
