This Norwegian salmon tartar is perfect if you are looking for something new and fresh for the Christmas dinner table.
Remove the skin and any bones. Cut the salmon in small cubes.
Peel and deseed the cucumber, then dice it finely.
Mix pieces of salmon, mustard, cucumber and dill in a bowl.
Leave for around one hour so that the flavours are blended thoroughly.
It is nice to serve the tartar in glasses, half filled with ice.
Put a lettuce leaf on top of the ice and arrange the tartar on top.
Squeeze a little bit of lemon on top.
Serve with a thin slice of toasted baguette.
