Spring vegetable stew with couscous and salmon

Procedure

  • Heat 300 ml of water in a pan, add salt, then pour in the couscous and cover. Meanwhile, sweat the leak in a frying pan with the extra virgin olive oil then add the peas, zucchini and broad beans. Allow to cook until the vegetables are still slightly crunchy.

  • In another frying pan, cook the salmon chunks for around 1 minute on each side.

  • Season the couscous with extra virgin olive oil. Separate the grains with a fork then add to the vegetables in the pan.

  • Add the salmon and serve.

Useful tip

Use artichokes instead of broad beans when in season.
