This Norwegian salmon recipe from Chiara Maci is delicate, nutritious and ideal for al fresco dining!
Heat 300 ml of water in a pan, add salt, then pour in the couscous and cover. Meanwhile, sweat the leak in a frying pan with the extra virgin olive oil then add the peas, zucchini and broad beans. Allow to cook until the vegetables are still slightly crunchy.
In another frying pan, cook the salmon chunks for around 1 minute on each side.
Season the couscous with extra virgin olive oil. Separate the grains with a fork then add to the vegetables in the pan.
Add the salmon and serve.
Use artichokes instead of broad beans when in season.
