Norwegian Salmon with Almonds, Cinnamon and Fennel

Here is a recipe where Norwegian salmon is baked in the oven with interesting flavours. Serve with potatoes of your choice and a yogurt sauce.

Procedure

  • Preheat the oven to 175 °C.

  • Slice leek and fennel, and place in a greased oven-proof dish.

  • Place the salmon over the vegetables and sprinkle with salt and pepper.

  • Drizzle the salmon and vegetables with olive oil.

  • Cover the salmon with cinnamon and sliced almonds, and bake in the oven for approx. 20 minutes.

  • Mix yogurt with lemon juice and honey.

Serve with yogurt sauce and potatoes of your choice.
