Marinate the Norwegian salmon fillet in homemade marinade with honey and Dijon mustard. Serve with couscous salad, and you have a fresh, healthy dinner on the table.
Preheat the oven to 200 °C.
Press the juice from the lemon and lime, and mix together with the honey, mustard and paprika powder. Season with pepper to taste.
Sprinkle the salmon fillet with salt. Place it in a greased, ovenproof dish.
Pour the marinade over the fish and bake in the oven for approx. 8 minutes.
Cook the couscous according to the packet instructions.
Add the butter, and use a fork to break up the couscous a little.
Add the frozen peas while the couscous is still warm. Allow to stand until the peas are warmed through.
Slice the red onion into thin strips, and tear the lettuce into smaller pieces. Toss the red onion and salad with the couscous.
Season with salt and pepper to taste, and stir in a little good quality olive oil.
Serve the baked salmon with couscous salad and lime wedges.
Tip: Norwegian salmon is delicious if it is not completely cooked through - it should preferably still be a little raw in the middle when you take it out of the oven.
