A ceviche with Norwegian salmon is fresh and tasteful. Here with onion, avocado and mango to compliment the salmon.
Cut the salmon into dices of approx. 0.5 cm.
Thinly cut red onion and spring onion.
Dice avocado and use a parisienne scoop to make mango balls.
Juice lime and gently mix with salmon, red onion, spring onion, mango, avocado and olive oil.
Season with salt and leave for at least 10 minutes before serving.
Serve in small bowls.
