This is a nice and healthy way to serve smoked Norwegian salmon. Lettuce, watercress and mustard is perfect on toast with the salmon.
Cut the salmon into thin slices.
Chop lettuce, watercress and spring onion.
Combine olive oil and mustard and mix with the lettuce, watercress and spring onion.
Toast the bread and cover with a layer of the lettuce mix.
Cover with a slice of smoked salmon and serve. Garnish with watercress leaves.
